Know Your Honey

Most Honey in Stores Is Not Real Honey

Here is something most people do not know: the majority of honey sold in American grocery stores has been ultra-filtered, heated, blended with cheaper syrups, or imported from countries with questionable quality standards. By the time it reaches the shelf, it has lost most of what makes honey beneficial.

Real honey, true raw honey, is a living food. It contains pollen, enzymes, antioxidants, and beneficial compounds that are destroyed by commercial processing. When honey is heated to speed up bottling, those fragile compounds break down. When it is ultra-filtered, the pollen is removed, making it impossible to trace its origin.

Local Florida honey tastes different because it is different. Our bees forage on mangrove, palmetto, saw palmetto, Brazilian pepper, and dozens of other Florida wildflowers. That unique terroir gives our honey flavor profiles you simply cannot get from a mass-produced bottle.

The Local Honey Difference

Why Local Matters

Buying local honey is not just a feel-good choice. It is a fundamentally better product.

Truly Raw

Our honey is never heated above natural hive temperature. Every enzyme, every grain of pollen, every beneficial compound is preserved exactly as the bees made it.

Local Pollen

Florida wildflower pollen stays in our honey because we never ultra-filter. Many customers seek out local pollen for seasonal allergy support.

Traceable Origin

You know exactly where your honey comes from: our hives in Bradenton, Florida. Not a blend from five countries. Not a mystery bottle. Our bees, our harvest, our jar.

Seasonal Variety

Each harvest tastes slightly different depending on what is blooming. Spring honey is delicate and floral. Fall honey from Brazilian pepper is bold and complex. Every jar is a snapshot of the season.

Common Questions

Frequently Asked Questions

Our bees forage on a diverse range of Florida wildflowers including palmetto, saw palmetto, mangrove, Brazilian pepper, citrus blossoms, and various native wildflowers. The mix changes seasonally, which is why each harvest has a unique flavor profile.

Many customers report that consuming local raw honey helps reduce seasonal allergy symptoms. The theory is that ingesting small amounts of local pollen helps your immune system build tolerance. While scientific studies are ongoing, the anecdotal evidence from our customers is strong.

True raw honey will crystallize over time, which is a sign of quality and purity. It may look cloudy or contain visible pollen particles. If honey is perfectly clear and never crystallizes, it has likely been heated and ultra-filtered. Our honey comes with chunks of comb when available.

Keep raw honey at room temperature in a dry place, away from direct sunlight. Do not refrigerate it, as this speeds up crystallization. If your honey does crystallize, simply place the jar in warm water (not boiling) until it liquefies again. Raw honey has an essentially indefinite shelf life.
