Definition

A light to medium amber honey produced by bees foraging on the fragrant purple flower spikes of the vitex tree (Vitex agnus-castus, also called chaste tree or monk's pepper). Vitex is widely planted as an ornamental throughout the American South and Mediterranean, providing an important summer nectar source.

Vitex (chaste tree) is one of the most reliable summer-blooming bee plants in USDA zones 7-10. The tree produces dense spikes of purple, lavender, or white flowers from June through September, providing nectar during the critical summer dearth when many other sources have finished blooming.

Beekeepers in the Deep South often plant vitex specifically as a bee forage tree. A mature vitex can produce pounds of nectar over a season, and a row of several trees can noticeably boost colony food stores during the lean summer months. The tree is drought-tolerant, fast-growing, and requires minimal care.

Honey Character

Vitex honey is light to medium amber with a mild, pleasant, slightly floral flavor. It lacks the assertiveness of darker honeys but has more character than very mild honeys like clover. The subtle herbal undertone reflects the plant's Mediterranean origin and its traditional medicinal use.

As a monofloral honey, pure vitex honey is relatively uncommon because vitex typically shares the foraging landscape with other summer-blooming plants. Honey from vitex-heavy areas is usually a vitex-dominant polyfloral blend with character influenced but not entirely defined by the vitex contribution.

Is vitex a good tree for bees?

Excellent. Vitex is one of the best bee trees for southern gardens. It blooms profusely during summer when few other trees produce nectar, grows quickly to flowering size (2-3 years from seed), is drought-tolerant, attracts dozens of pollinator species, and provides pollen as well as nectar.

Does vitex honey have medicinal properties?

Vitex berry extract has documented effects on hormonal balance (particularly for PMS and menopause symptoms), but there is no evidence that vitex honey retains these hormonal effects. The nectar composition differs from the berry extract composition. Vitex honey provides the general benefits of raw honey.

When does vitex bloom?

June through September in the southeastern United States, with peak bloom in July. The bloom period extends over 2-3 months because flower spikes open progressively from bottom to top. Deadheading spent flower spikes can encourage a second flush of bloom.
