Definition

Honey that has been coarsely strained to remove large debris (wax pieces, bee parts) but retains its natural pollen grains, propolis particles, and fine wax crystals. Unfiltered honey appears cloudier or hazier than commercially filtered honey because these suspended particles scatter light.

Why Unfiltered Matters

Commercial ultra-filtration removes pollen grains, propolis particles, and other naturally occurring solids from honey. This produces a crystal-clear, slow-to-crystallize product with a longer shelf appearance. However, removing pollen eliminates the ability to identify the honey's botanical and geographic origin (pollen analysis is the standard method for verifying honey origin).

Unfiltered honey retains its pollen content, allowing origin verification and providing the nutritional benefits of bee-collected pollen (proteins, vitamins, minerals). The retained propolis particles contribute antimicrobial and antioxidant activity. The retained wax crystals are harmless and edible.

Strained vs. Filtered vs. Ultra-Filtered

Strained (coarse straining through mesh): removes large particles, retains pollen. This is what most beekeepers do. Raw honey is typically strained. Filtered (pressure filtration through fine mesh): removes most pollen and particles. Produces clearer honey. Ultra-filtered (heated plus pressure filtration plus diatomaceous earth): removes virtually all pollen and particles. Makes origin identification impossible.

Is unfiltered honey better?

For quality and authenticity, yes. Unfiltered honey retains pollen (origin verification, nutritional value), propolis (antimicrobial), and natural particles that indicate minimal processing. For cosmetic appearance and shelf life, filtered honey looks cleaner and crystallizes more slowly.

Why is my honey cloudy?

Cloudiness in honey typically indicates either suspended pollen and particles (in unfiltered honey, a quality indicator) or early crystallization (glucose crystals forming). Neither cloudiness cause is a defect; both indicate genuine, minimally processed honey.

Does unfiltered honey have more health benefits?

Unfiltered honey retains compounds removed by filtration: pollen provides proteins and micronutrients, propolis provides antimicrobial and antioxidant activity, and wax crystals are harmless. Whether these retained compounds provide meaningful health advantages over filtered honey depends on the quantity consumed.
