The Unique Manuka Factor grading system that measures the antibacterial potency of Manuka honey from New Zealand. The UMF scale correlates with the concentration of methylglyoxal (MGO) and other bioactive markers, with ratings typically ranging from UMF 5+ to UMF 25+.
Not all Manuka honey is created equal. The concentration of bioactive compounds, particularly methylglyoxal (MGO), varies dramatically depending on the age of the honey, the specific Manuka bush variety, and environmental conditions during the bloom. The UMF grading system, developed by the UMF Honey Association in New Zealand, provides a standardized, independently tested measurement of these bioactive markers.
The UMF scale assigns a number that corresponds to the honey's tested antibacterial potency. UMF 5+ is low activity, suitable for general consumption. UMF 10+ is considered the minimum for meaningful therapeutic properties. UMF 15+ is high activity, used for targeted health applications. UMF 20+ and above is very high activity, typically the most expensive and used primarily for wound care and specific health protocols.
The UMF rating tests for four key markers: leptosperin (confirming genuine Manuka origin), DHA (a precursor to MGO), MGO (the primary antibacterial compound), and HMF (a freshness indicator that increases with age and heat). All four must meet threshold requirements for the honey to receive a UMF rating.
UMF ratings directly affect pricing. A jar of UMF 5+ Manuka honey might cost 15 to 25 dollars, while UMF 20+ commands 50 to 100 dollars or more for the same size. For general daily consumption (on toast, in tea), UMF 5+ to 10+ is sufficient and cost-effective. For specific therapeutic applications (wound dressing, digestive health), UMF 15+ or higher may be worth the premium.
Higher UMF indicates stronger antibacterial activity, but 'better' depends on your purpose. For eating on toast or in tea, UMF 5-10 provides excellent flavor and nutritional value without the premium price. For therapeutic applications like wound care, UMF 15+ provides measurable additional antibacterial potency.
Look for the UMF trademark on the label, which is licensed only to tested and verified products by the UMF Honey Association. The jar should display both the UMF rating and a batch number that can be traced to independent laboratory test results.
