Cooking with Crystallized Honey

Honey

Definition

A guide to using crystallized (solidified) honey in cooking and baking, including situations where crystallized honey is actually preferable to liquid honey. Most people try to re-liquify crystallized honey, but it has distinct culinary advantages in its solid state.

Advantages of Crystallized Honey

Crystallized honey is easier to measure than liquid honey because it holds its shape on a spoon and does not drip. A tablespoon of crystallized honey stays put rather than running off the spoon into the bowl. This practical advantage alone makes it preferable for precise baking measurements.

Crystallized honey also spreads on bread and toast without dripping through. Spread a layer of crystallized honey on warm toast and it softens on contact while staying in place. This is the traditional way that honey was consumed for most of human history because honey spent most of its existence in a crystallized state.

Recipe Applications

In baking, crystallized honey incorporates into butter and dry ingredients just as easily as sugar, and it dissolves completely during baking. Cream softened butter and crystallized honey together for cookies and cakes. The slight moisture from the honey replaces some of the liquid in the recipe.

For rubs and marinades, crystallized honey is ideal because it adheres to meat surfaces without running off. Mix crystallized honey with spices, garlic, and a splash of vinegar for a rub that coats evenly and caramelizes beautifully during grilling.

Frequently Asked Questions

Is crystallized honey still good?

Absolutely. Crystallization is a natural process in all pure honey and does not indicate spoilage. Crystallized honey has the same flavor, nutritional value, and safety as liquid honey. It will last indefinitely in this form.

Does crystallized honey dissolve in hot drinks?

Yes. Crystallized honey dissolves readily in hot tea, coffee, and warm water. It takes slightly longer to dissolve than liquid honey but stirs in completely within 15-30 seconds. Some people prefer adding crystallized honey to hot drinks because it is easier to handle.

Can I use crystallized honey as a face scrub?

Yes. The fine crystals in naturally crystallized honey make a gentle physical exfoliant. Apply to damp skin and massage gently. The crystals dissolve slowly with body heat, transitioning from a scrub to a nourishing mask. This dual function makes crystallized honey a unique natural skincare ingredient.
