A flavored honey blend made by infusing raw honey with ground cinnamon or cinnamon sticks. Cinnamon honey combines the natural sweetness and health benefits of raw honey with the warming spice of Ceylon or Cassia cinnamon.
Honey and cinnamon is one of the oldest flavor pairings in culinary history. Ancient Egyptian, Chinese, and Ayurvedic traditions all used the combination both for its taste and for perceived medicinal properties. Modern cinnamon honey brings these two ingredients together in a ready-to-use spread that works on toast, in tea, drizzled over yogurt, or stirred into oatmeal.
Making cinnamon honey is straightforward: raw honey is gently warmed (never above 104 degrees Fahrenheit to preserve enzymes) and blended with finely ground cinnamon or infused with whole cinnamon sticks over several days. The cinnamon compounds slowly dissolve into the honey, creating a warm, spiced flavor that intensifies with time.
Not all cinnamon is equal. Ceylon cinnamon (Cinnamomum verum, also called "true cinnamon") is mild, delicate, and contains very low levels of coumarin, a compound that can be harmful to the liver at high doses. Cassia cinnamon (Cinnamomum cassia), the variety sold in most grocery stores, has a stronger, more pungent flavor but significantly higher coumarin content. For regular daily consumption in honey, Ceylon cinnamon is the safer choice.
The internet is full of extravagant health claims about cinnamon and honey: weight loss, diabetes reversal, cancer prevention. The reality is more measured. Both honey and cinnamon contain documented bioactive compounds (antioxidants, anti-inflammatory agents), but clinical evidence for the specific combination treating diseases is limited. Enjoy cinnamon honey for its genuinely wonderful flavor and the incremental benefits of raw honey and cinnamon's antioxidant profiles, not as a medicine.
Gently warm 1 cup of raw honey in a double boiler (keep below 104 degrees F). Stir in 1 to 2 tablespoons of finely ground Ceylon cinnamon until fully incorporated. Transfer to a jar and let it infuse for 24 to 48 hours. The flavor deepens over time. Alternatively, place 3 to 4 whole cinnamon sticks in a jar of honey for 1 to 2 weeks.
While cinnamon may modestly affect blood sugar regulation and honey provides nutritional benefits compared to refined sugar, there is no clinical evidence that cinnamon honey causes weight loss. It should be enjoyed as a flavorful natural sweetener, not as a weight-loss supplement.
